Production Requirements



The production requirement corresponds to a traditional culture as it was done in Haute-Provence, treating with respect the soil and the environment :

It is grown in a protected area (235 villages in Haute-Provence) at an altitude of more than 400 m.
Einkorn is grown every 3 years maximum on the same area, the former culture must not be a grain.
Only "Triticum monococcum" seeds can be used. They must come from the protected area and they must be sown on a clean soil.
Herbicides and chemical products are not allowed.
Fertilization from January to March, limited to 60-60-60 NPK maximum.
Mechanical weeding only.
Yield limited to 40 quintals per hectare.
Harvest from the end of July until the beginning of September.
Storage of the raw grain in the protected area in adapted packaging for a maximum of 2 years after the harvest.
Traceability all along its elaboration.
Hulling in an authorized place situated in the protected area.
Storage of the hulled grain in a special food-use equipment for 6 months maximum before the producer sells it.
It must be packaged in bags of 500 g to 25 kg with a "deadline for the optimum use" of 18 months since it was hulled.
