Rich in carbohydrates, proteins, fat, it is a very nutritive cereal. 100 g of einkorn provide enough proteins for a day.

It contains twice fat as in wheat and thanks to its fibers, it is very digestible.

It contains very little gluten.

It is very rich in minerals : 4 times more magnesium than in brown rice, 5 times more phosphorus than in soya.

Its proteins contain 8 amino-acids including lysine which is rare in cereals.
