Recipes



Einkorn can replace rice, pasta or corn and is easy to cook. You can use it with mixed salads, vegetables, meat.

Bread, biscuits, and pastries can be made with einkorn.

Einkorn Soup
For 6 people :

In a large pot, sauté in olive oil 2 minced onions, 3 cloves garlic, a piece of meat (lamb or beef or pork).
Add 3 litres of water, 400 g of einkorn, a few carrots, leeks, chopped celery, chickpeas or beans, salt, pepper, thyme, laurel, a small onion with cloves. Bring to boil, reduce heat and simmer gently.

Basic recipe

50 to 60 g of einkorn per person. Rinse it and cook it for 30 mn in 4 volumes of salted boiling water.

Then, strain it.
